JC Terblanche says: ‘This exceptional bean also goes by the name of Borlotti lingua di Fuoco and is a fascinating heirloom variety that originates from South America, but is most popular in Italy. This multi-purpose bean can be used at various stages: as a very young green bean, as a shelling bean when the seeds have swollen inside the pods, but are not yet hard, and as a dry bean when allowed to dry on the bush. The beans are large with a mottled seed coat. The tongue of fire also refers to the intense red/pink colour of the pods as they mature – this makes it easier to pick amongst the greenery. The beans are both ornamental and delicious – if you want a bean that can be used in various ways regardless of when you pick it, then this is your bean.’
