The lactobacilli in kefir survive stomach acid and get to the other side where they help populate your gut with good bugs.

It turns milk into a creamy, sour, slightly effervescent concoction that gives the final product a complex deliciousness. Yes, the flavour takes a bit of getting used to but it’s worth it. The lactobacilli in kefir survive stomach acid and get to the other side where they help populate your gut with good bugs.

You can use kefir as it is, and in all recipes that require yoghurt and buttermilk – just add more milk to adjust consistency if needs be. And if you place a batch of mature kefir in muslin to drain the curds, you can create a lovely soft cheese.

Your kefir grains are sent dried, and will need rehydrating when they arrive … you just need to open up the packet, pop them in a clean jar and add some whole milk (not UHT). Cover the jar with some fabric, and leave the kefir at room temperature. In a few days, you’ll have your first batch of kefir to enjoy. As you refresh the kefir, the grains will fluff up and will start multiplying.
