I recommend these to anyone who is searching for that one variety that has it all. Vaquero means cowboy in Spanish. This variety is from South America and it is well adapted to our warm and dry climate. If this isn’t a beautiful bean then I don’t know what is. Setting its looks aside, this is an absolute workhorse of a variety and produces a serious amount of beans for a bush type. The beans are medium-sized and have a white base coat covered with the most amazing black patterns. The bean’s seedcoat colour changes as the season warms up. Spring-sown beans will be almost white with a single black stripe above the eye but, as the soil heats up, the beans develop more patterns. I’ve seen this with other beans too, but this is distinctive with Vaquero. When cooked the beans produce a black/grey liquid called ‘pot liquor’. Most black beans give off this ‘ink’ which contains more healthy goodness for you. Highly recommended.’
